Typically, plum tomatoes are used to create a range of tomato sauces or pastes. Plum tomatoes are long, around the size of an egg, red or yellow, squishy, and typically have a very thin skin. They are ideal for canning as well as cooking a range of foods. Since they produce less juice, the sauces produced from them are thicker.
